I love breakfast for dinner, but equally, I love dinner for breakfast. This happy little pizza combines the best of both worlds and can be loved and devoured at breakfast, brunch, or dinner.

While you do need to preheat the skillet for this recipe, this little everything breakfast pizza only takes about two minutes to assemble, and less than ten in the oven.
I highly recommend making your own homemade pizza crust, but if you're running short on time or energy (or both) this breakfast pizza can definitely be made with a prepackaged crust mix or pre-made dough.
Using homemade dough in a hot skillet will result in a breakfast pizza that resembles a bagel breakfast sandwich in the best way. The skillet lends to an ultra-crispy exterior and a super soft and chewy interior in the crust, and a sprinkle of everything seasoning brings it all home. The egg bakes up with a perfectly set yolk that isn't overcooked, and keeping it perched on top of the melty cheese prevents it from making the dough soggy.
Ingredients
I made this particular breakfast pizza with Havarti, but I love using Swiss, cheddar, and gouda. The dijon mustard adds a nice base for the egg and garlic, but it's totally optional if you're not a fan.
- pizza dough
- butter
- garlic
- dijon mustard (optional)
- egg
- cheese
- everything seasoning
- basil or parsley for garnish
Instructions
- Preheat a cast iron skillet or pizza stone in the oven at 500º for 30 minutes. Allow the dough to rest on a floured work surface at room temperature while the skillet heats up.
- While the skillet is preheating, mash together the softened butter, dijon mustard and minced garlic. Set aside.
- After the dough has rested for 15-20 minutes, use floured hands to work the dough into a rough circle, creating a slight lip around the edge to prevent the egg from spilling over.
- When the pizza is ready to be assembled, lightly butter one side of the cheese slice with the dijon and garlic mixture. Set aside, butter side up.
5. Once the skillet or pizza stone has finished preheating, carefully transfer the dough to the skillet.
6. Place the cheese, butter side down, onto the dough.
7. Carefully crack an egg over the cheese. It's okay if a little bit spills over onto the pan or pizza stone, it'll cook right up and be super easy to pull off once the pizza is cooked.
8. Sprinkle with everything seasoning. Carefully and slowly transfer the skillet to the oven and bake for 8 minutes, until the crust is golden brown and the egg is set.
Tip: Be careful when transferring the skillet to the oven. Not only is she piping hot, but the egg will be slippery on top of the cheese.
Substitutions
- Cheese - instead of havarti, try a slice of white cheddar or even gouda!
- Everything Seasoning - use your favorite variety of everything bagel seasoning. I'm particularly fond of jalapeno and sea salt. Check out this recipe for homemade everything seasoning if you want to make your own.
